New Chef appointed at Hotel President
January 31st, 2007
The President Hotel announces today the appointment of a new Chef, Milan Pešek.
Milan Pešek (49), who is a specialist in French cuisine, is a familiar name in the world of fine dining, having earned his excellent reputation in many restaurants and hotels in both the Czech Republic and France (for example, the Restaurant Sarah Bernhardt – Hotel Paříž in Prague, Hotel de Crillon in Paris, Hotel du Palais in Biarritz, Brasserie La Lavande in Prague and others).
Pešek has been working in the Hotel President since January 2006, when he was appointed Executive Chef of the Vltava Restaurant.
When asked about his source of inspiration, Pešek replies: „Inspiration does not come by itself. Sometimes it is a coincidence, which includes a certain experience and the will to get somewhere.“ And he adds: “When cooking, you must have some knowledge about food and how to use it, how to mix tastes, which of them go together and which do not. You can use your imagination but the basic thing is to be as easy as possible, to respect the time-proven recipes of culinary masters, to be disciplined and to love cooking. And, especially, to be a good man because everything that is inside is reflected in what you are doing.“
Although awarded many times, Pešek says that his greatest honour is receiving positive feedback from restaurant guests, whether it comes in the form of verbal praise or an empty plate.
Pešek is married and is father to three sons. Apart from cooking, his hobbies include travelling and relaxing in his cottage in his beloved South Bohemia.
